I've looked around, but haven't been able to find anything that explicitly addresses this question.
If I'm running Beta1, and want to upgrade to the release version of 2007, how should I proceed? Do I want to simply unzip the Web install files over my existing installation and run an update script for the database? Is there a document that addresses this situation directly?

I think what route you go depends on if you are on a hosted solution or on your own.
With hosted solutions, sometimes removing all folders and files removes the permissions you have and can create headaches so overwriting files is probably the preferred route I'd go with. If your provider gives you ability to change permissions easily that it may be possible to go with a clean install.
If you have total control over the server, the approach I'd take is to do a clean install, then change the connection back to your previous database after running the SQL scripts to upgrade from Beta's. A clean install would insure that any files that they removed after Beta 1 would also get removed.

This might also help point you in the right direction. It is for 2.1 to CS2007 but the steps would be the same to upgrade from the beta... the only difference would be the SQL script you run on your database will be different. (You will see the appropriate one in the SQLScripts folder in the download.) If you aren't sure what files you need and don't need just simply copy over the new files. If you have files that remain that don't do anything do not worry about it. Better to have a file that isn't being used than not having a file that is.
