I am working on a CS2007 install on an 1and1 VPS.
We are migrating from a Snitz forum with 4800 users, 15,000 threads, and 104,000 posts. Most of this is "historical data" as we generally only have about new 300 threads per month.
The CS database after the migration is about 350 mb. (Running on MSDE 2000 as part of the VPS)
VPS Stats:Dual-Core AMD Opteron2.39 GHz, 352 MB RAMWindows Server 2003 x64
Are there any tricks that I need to do to keep this running stably on the server? i.e. SQL server settings and/or application pool settings.

CS can be quite memory intensive due to aggressive caching.
I would not reccomend running CS on anything less than 512mb. If you're running both CS and SQL server on the same server, you may want to look at 1GB ram.

I understand the memory issues of both CS and SQL...
However I'm trying to work withing the confines of the VPS package that I currently have, and I don't see a VPS package offered by 1and 1 that has 1GB of RAM.
Is there a list of appropved hosting companies that have "tailored" a VPS for Community Server ?
Should I take another look at shared hosting?
If you don't see a 1GB VPS package, it might be worth speaking directly to 1and1's sales team and ask about the possibility of one. As you've already got a VPS set up, increasing the memory should be just the touch of a button away, so there may be a chance you can negotiate a deal with them to get that extra memory.

As for shared hosting, it really depends on what you want to use CS for. If you want to use any of the enterprise features - e.g. Enterprise Search, Mail Gateway, Harvest you'll need direct access to the server to install those addons, which shared hosting won't offer. Some hosts also provide memory limits on what can be run in shared hosting so you'll want to check that out before you go down that route.
