Catch-all vs separate mailboxes

I don't have the mail Gateway yet, but I have a question which may well be answered in the documentation.

I need to allow users to reply to various forums via email, but before that I need to request what I need setup on the Exchange box.  The installation instructions suggest using a catch-all if you're using a queue folder, but I'll be using Exchange. Will I need a separate Exchange inbox account for each forum, or is it possible to reply to different forums via a single inbox?
