 Please would you post me a URL to the Installation Documentation for Mail Gateway for CS2007?

We have a license, but I don't think our hosting company installed this add-on for us, or didn't enable it, so I've got to learn how, from scratch.

And if I've got to re-download this add-on, where should I find it?

The documentation for installing Mail Gateway is included with the download for Mail Gateway, available from the complete list of downloads, or directly here:

http://get.communityserver.org/download/mg/

The add-on does require being able to install software on the server itself, so if you are in a shared hosting type of environment, you more than likely won't be able to use Mail Gateway as most hosting companies do not allow users to install and run Windows services.
